Gluten Architecture

Gluten is a protein network that forms when two wheat proteins, glutenin and gliadin, combine with water. Kneading stretches and aligns these proteins into elastic sheets that trap gas bubbles from fermentation.

Bread flour has 12-14% protein, creating strong gluten for chewy loaves. Cake flour has only 7-9% protein, producing tender crumbs. Using the wrong flour is like building with the wrong materials — the chemistry determines the structure.

Overworking pie dough develops too much gluten, turning a flaky crust into a tough shell. Professional bakers keep ingredients cold because chilled fats physically interrupt gluten strands, creating the layered, delicate texture of perfect pastry.
