Fighting Decay

Food spoils because microorganisms — bacteria, molds, and yeasts — eat it before you do. Every preservation method works by making food inhospitable to these microbes.

Humans figured out preservation through trial and error over thousands of years. Drying meat in the sun, salting fish, smoking game, and fermenting vegetables all emerged independently across cultures. The chemistry is the same everywhere: create conditions where bacteria cannot grow.
