Catch the Freeze
Of all the signals, the freeze is the one to act on fast. When a dog goes completely still and stiff, it is deciding: flee or fight. There is no warning left after this, so the moment you see it, take the pressure off — back away, let go, or remove whatever is upsetting the dog.
Then write it down. A simple bite log — what happened, who was there, what came just before — turns scattered "random" moments into a pattern you can finally see.
