Phase Changes Break Rules

Something strange happens when ice melts: you add heat, but the temperature does not change. The thermometer stays stubbornly at 0 degrees Celsius until every bit of ice has melted.

This hidden energy is called latent heat, and it is enormous. Melting one kilogram of ice takes enough energy to heat that same water from 0°C to 80°C.
