LESSON 3 · Live Greener Without Going Crazy
The Plant-Based Payoff
Shifting toward plants is one of the most powerful changes you can make for your environmental footprint. A large UK study from Oxford University researchers found that, compared with a high-meat diet, a vegan diet cut food-related greenhouse gas emissions by about seventy-five percent, land use by roughly seventy-five percent, and water pollution by around seventy percent.

Food waste reduction is the other high-impact lever. An estimated one-third of all food produced globally is wasted — in wealthy nations, mostly at the consumer level. Reducing waste by even half would eliminate more emissions than converting every car on Earth to electric.
