LESSON 3 · Live Greener Without Going Crazy
Practical Diet Shifts
Meaningful change does not require perfection. According to the Oxford study by Scarborough and colleagues (Nature Food, 2023), people who eat little meat have roughly half the climate impact of heavy meat-eaters — a large share of the benefit a fully vegan diet delivers, and far easier to sustain for life. Steering away from the highest-impact options like beef and lamb stretches that benefit even further.
The flexitarian approach — plant-heavy meals with occasional meat — fits both the science and human behavior; radical overnight diets usually collapse within months. Three shifts deliver the most impact: choose chicken over beef, cut food waste, and favor seasonal local produce.
